This whole feeding them all day every day thing is bananas. I’m done. You're done. We’re all done, and we are far from getting our lives back.
We know you're trying your best, so here’s a few ideas of what to do with leftover Easy Freezy meals because we know it’s hard.
Have some leftover Crack Chicken? Slap it on some sliders!—Remove a slab of Hawaiian rolls from their packaging and place on a baking sheet. Cut the entire slab in half horizontally and remove the top. Throw your leftover Crack Chicken into the microwave and heat it up for 1-2 minutes. Spread warm shredded Crack Chicken over the bottom half of the bread, and top with sliced cheese of choice. We like cheddar at our house! Place the tops back on the rolls and bake at 350 until the cheese and chicken are all warm and melty. Remove from oven and let rest about 5 minutes before cutting into individual sandwiches.
Cool Ranch Chicken Tacos DIP—Your’e gonna love it. Next time you make Cool Ranch Chicken Tacos, reserve about 2 cups of the shredded chicken. When you’re getting ready to party, combine the cold chicken, 1 cup of shredded cheddar, and 4 oz softened cream cheese. Stir together in a small shallow baking dish and top with more shredded cheese, BECAUSE CHEESE, and bake at 350 for about 10-15 minutes or until everything is bubbly and melty. Have tortilla chips ready to get this dip straight to your mouth, after a very impatient waiting period for cooling off, of course.
Pork Carnitas—Put it on nachos. Do it. Lay out some tortilla chips on a pan, pile on the cheese, Pork Carnitas, beans, and whatever veggies need to be chopped up and eaten, and put it under the broiler. Do. Not. Leave. Watch it the whole time otherwise you’ll be ordering pizza for dinner. Eat them straight from the pan in the kitchen… Or I guess you could feed them to your family. Whatevs.
