September Leftover Ideas

We know you love Easy Freezy because you’re tired of cooking AND tired of the same old standbys and takeout. We have a few ideas here for what to do with leftovers. At our house we often work our leftovers into new dishes so our kids don’t catch on that they’re eating leftovers AND, most importantly, we save ourselves time and a little money.
Asian Chicken Lettuce Wraps — If it’s possible that you have any leftovers of this family favorite you could definitely use your leftovers and a bag of broccoli slaw to create a new dish! Saute the broccoli slaw in a large pan. When it’s almost finished add the leftover chicken from your lettuce wraps and splash on some soy sauce and heat through. Serve over rice.

Meatball Pizza — This meal makes so much, we always have leftovers. We have added al dente pasta and top with cheese and baked it for an easy pasta bake OR try it with
Nashville Hot Chicken — Can you just imagine Nashville Hot Chicken Nachos?! You know the drill... lay a single layer of tortilla chips on a sheet pan and top with leftover chicken and cheese and whatever nacho toppings you like. Put it under the broiler to melt it all together and enjoy! This also works well with our Pork Carnitas, Creamy Cool Ranch Tacos and Ranch Chicken.

Mississippi Crack Chicken Sandwiches — Another one that feeds us for days. We have mixed leftover shredded Mississippi Crack Chicken with cooked rice, vegetables (we like broccoli florets and shredded carrots), cream cheese and shredded cheese. Of course top with more cheese and bake till hot and bubbly. You could even throw this together in your crock pot if you don’t want to heat up the oven.
