We almost always have leftovers of our Easy Freezy meals but it’s often not quite enough to feed our family fully a second time and if your family is like ours, they wouldn't dream of eating leftovers. So we like to transform our leftovers into NEW meals! Try out some of our ideas and post in our Facebook group how they turned out for you.
Declan's Chicken
When we make Declan’s Chicken we make sure to add the most amount of chicken breasts it calls for so that we can have leftovers. For sliders, cut a slab of Hawaiian Rolls in half and top the bottom half leftover shredded Declan’s Chicken then top with sliced cheddar. Return the top and bake in the oven until all of the chicken is hot and the cheese is melty.
Nashville Hot Chicken
We are weenies when it comes to spicy so if you took the plunge and tried our Nashville Hot Chicken and you stopped yourself from eating all of it, try it for lunch on top of baked potatoes topped with shredded cheese and sour cream. You will NOT regret it.
Chicken Chili Verde
Chicken Chili Verde makes a great topping for nachos. Sprinkle it over a pan lined with tortilla chips, top with your favorite nacho toppings and throw it under the broiler and dinner is DONE.
French Dip Sandwiches
I don’t know how you could have leftover French Dip beef, but when we do it’s really not enough for another meal. So mix what is left of the gravy with mixed frozen veggies and spread some lovely mashed potatoes over the top and bake till everything is hot and you have a lazy Shepherd’s Pie.
Korean Beef Tacos
If you haven’t heard of Bibimbap we are here to let you in on the secret: it’s mixed rice with meat and vegetables. Simple and easy. Layer your bowl of rice with leftover Korean Beef Tacos meat and your favorite veggies… carrots, spinach, mushrooms… anything you want, bonus if you have some kimchi or go traditional and finish it with a fried egg! Top with your spicy mayo, sriracha or soy sauce.
