August Menu Leftover Ideas

We filled the August menu with so many family-friendly meals! We know so many of these are your absolute favorites (believe me, they’re our faves too!) But if you’re family is like mine, sometimes you have to get creative with those leftovers just to get some calories in these kids... am I right!?
Let's dive in...
Poppyseed Chicken
Who even has leftovers of this one?! 😆 But IF you find yourself with a little it leftover… add a small can of diced green chiles and shredded cheddar or colby jack cheese. Throw it in a small casserole dish, top with more shredded cheese, and bake until the cheese melts and begins to brown and everything is heated through. Scoop out with tortilla chips, Ritz, Fritos Scoops, celery or a spoon.
Perfect Burger
As a family of five, we often have a single leftover burger patty after dinner. It’s maddening because not one of those doo-doo heads will eat leftovers!
I slice the patty pretty thin and throw it onto a quesadilla! Some times I get fancy and throw on some tomatoes, onions and pickles but my pickiest just eat the burger, cheese and tortilla. This usually makes a good lunch or snack (because they never stop eating).
Dang Good Chicken
This mean can be a little spicy so leftovers are great cooled off as a chicken salad.
Cut the chicken into small chunks, or shred it (whichever you prefer… or whatever is the LEAST amount of work). Stir in some mayo a little at a time, you can always add more but it’s hard to take it out. Splash in some soy sauce, sprinkle on some salt and pepper and maybe a teensy squirt of ranch dressing. Serve on a bed of mixed greens if ya fancy, or on a sammich because BREAD.
Enchilada Soup
Every time we sell this in the store, I tell people that as it cools, it thickens. To thicken it even more, add MORE CHEESE (can you tell we freaking LOVE CHEESE?). When the soup is thick enough, use it as a dip. Any excuse at all to consume tortilla chips we are on board with. That is all.
